This post marks the start of a new subject for the Anonymous Foodie, Interviews! The idea is to get an understanding of the people behind the restaurant and hopefully allows restaurant goers to connect with them as well. This first interview takes place at the Egg Factory with one of the founders, Yogesh Mokashi.
The Anonymous Foodie spent over 2 hours chatting with him and this is an extract of what he had to say.
- Can you give the our readers an idea of your background and why you got into the restaurant business?
- Am an Engineer + MBA with typical sales & Distribution background at some reputed corporates. We entered the restaurant business as we loved food and my size is testimony to that and also the restaurant business is just about getting organized in India and hence opportunities abound.
- Why the name the Egg “factory”?
- We wanted to convey a place where eggs are processed into various forms continuously through the day
- What’s unique about the Egg factory?
- Eggs…no one has specialized in that one ingredient, unique combination of quick but yet unhurried food,food with no attitude…simple and honest…
- How do you address building brand loyalty at your restaurant?
- Brand Loyalty- consistency in food , VFM pricing and in a almost fine dine like ambience
- What dishes would you recommend to our readers if they choose to visit?
- Huevos Rancheros, Bread Masala, Fried Egg Sambal, Spanish omlette, South western frittata, Caramel custard in short….
- Finally what is your vision for the Egg Factory?
- To be among the top 2-3 preferred places to eat out on a regular basis(not occasion led eating out) wherever we are present.

Whenever I come across a new restaurant concept I have to admit it really peaks my interest. So when news broke about a restaurant that planned to only serve dishes that were egg based there was no doubt that this was something worth exploring.
